Juicy pomegranate, chilled curd and fresh coriander along with spices come together to make Pomegranate raitha, a perfect summer treat. Eat it alone or with any flavored rice of your choice.
The bright combination of red, ripe pomegranates and the white curd is enough to attract the kids and makes sure that the snack box is empty when sent to school. Pomegranate is filled with anti oxidants, is anti inflammatory, rich in vitamin c and both curd and pomegranate are good for digestion.

Ingredients:
Curd -1 cup
Pomegranate arils- ¼ cup
Onion-1 tblspoon(finely chopped)
Cucumber- 1 tblsp(finally chopped)
Coriander leaves- 1 tblsp(chopped)
Roasted cumin powder- 1 tsp
Black Pepper powder- 1 tsp
Chat masala- 1/2 tsp
Sugar - 1/2 tsp
Salt-to taste
Pomegranate arils- ¼ cup
Onion-1 tblspoon(finely chopped)
Cucumber- 1 tblsp(finally chopped)
Coriander leaves- 1 tblsp(chopped)
Roasted cumin powder- 1 tsp
Black Pepper powder- 1 tsp
Chat masala- 1/2 tsp
Sugar - 1/2 tsp
Salt-to taste
Method:
- Remove pomegranate arils and keep it ready.
- take curd in a bowl, add sugar and whip.
- Add roasted cumin powder, black pepper powder, chat masala and salt. Mix well.
- Now add pomegranate arils, onion, cucumber and coriander leaves and mix well.
- Garnish with pomegranate arils and coriander leaves.
Notes:
- This is a mildly spice version which I prefer for my kids.You can actually add a spoon of chilly powder or slit green chillies to make it more spicier.
- You can also avoid adding onion and cucumber and make it only with pomegranate. It all depends on your choice and preference.
