Dragon chicken is a juicy chicken dish that is cooked in a lip smacking sauce, which is tangy and sweet and can be relished by both young and old alike. This is very easy to make and can be a part of lunch or served as an evening snack. It is also a preferred party snack. I haven't used any additional coloring but the rich red color is sure to attract the kids. Moreover, I love cooking this dish as it is cooked with always-found-at-home ingredients and is ready in a jiffy.
I first made this dish after my daughter came across it in a kid's TV channel. It was part of a cooking show for kids which showed easy and healthy recipes. It became my family's favorite since the first time I made it. We usually have it with Chicken Friedrice. Now it is your turn to try out this dish and impress your kids :) .

Ingredients:
Boneless chicken- 250 gms
Cornflour-1 ½ tblsp
Egg-1
Garlic- 1 tblsp(finely chopped)
Chilly flakes- 1 tsp
Tomato sauce- 1 tsp
Butter- 1 tsp
Sugar-1/2 tsp
Salt- to taste
Oil- 1 ½ tblsp
Method:
1. Marinate the chicken pieces with egg and corn
flour. Rest it for 10 mins.
Then add oil to a pan and fry the chicken
pieces. Flip to the other side and remove when cooked. Keep it
separately.

To the same pan add garlic and fry well until
raw smell leaves.

Then add
butter, sugar, salt and tomato sauce to that and mix well.

Now we
can add the fried chicken pieces to this and mix well and leave it in low flame
for 5 mins so that the spice gets into the chicken.

Finally add few cashews to the chicken and mix well. Switch off the flame and serve hot.
Notes:
- Cut the chicken pieces into bite size pieces so that it gets cooked fast.
- Since my kids don’t take much spice, I have added 1 tsp of chilly flakes. If you need more spice add more of chilly flakes as it’s the only spice that we are adding.
- I haven't added any artificial colour to the dish. The bright colour of the dish is because of tomato sauce.

add cashews, mix well and switch off.
