Sandwich is one of the easiest breakfast menu that is nourishing and filling. It is a very common snack food, best for picnics. Loaded with veggies, one can also taste a hint of cheese in every bite of this sandwich. This is also a great snack for school. This sandwich is a perfect blend of carbs, proteins, vitamins and fibers. I have toasted it on the tawa. You can use a sandwich maker if you want.
This recipe was shared by my friend, Priya. We have been good friends and neighbors for last few years. Being a good cook, she has shared lots of recipes with me which I will be adding to the blog, one by one. But I must say Priya's mom, Rukmini amma is the best. So will be posting Iyengar special dishes from Rukmini amma in the near future. Coming back to the recipe, I just followed the exact same recipe as given by Priya. You can play with the filling of your choice. If you are a fitness freak, go with brown bread. Have this sandwich with ketchup, along with a glass of fresh fruit juice, and you are good to start your day!

Course: Snacks
Ingredients:
Bread slices- 8 pcs
Onion- 1 (finely chopped)
Carrot- 2 ( grated finely)
Potato- 2 ( grated finely)
Garam masala powder- 1 tblsp
Cheese cubes -2
Salt – to taste
Ghee- 1 ½ tbl sp
Oil- 1 tsp
Method:
1.
Heat oil in a kadai. Add the onion and fry for a
few minutes, until it turns pink in colour.

Now add the carrot and potato. Give it a stir. The moisture in the veggies is enough for it to be cooked. If at all you need, sprinkle a little water.

Add garam masala powder and salt. Fry until the veggies
become soft and switch off the flame. Keep it aside.

Add ghee
on a tawa and toast the bread slices on both sides.
5.
Now fill one of the bread slices with the cooked
veggies and grate some cheese on top of it.

Cover it with the other bread slice and press it hard so that both the slices stick together. Toast it furthermore on both sides, so that it becomes crispy.

Repeat the same with the other bread slices and
serve it hot.
Notes:
·
Don’t add too much water while cooking the
veggies. It might turn soggy. Just sprinkle a little, whenever needed.
· If you need it to be spicy, you can add a spoonful of chilly
powder.
