Cabbage rice is a very healthy variety rice. It is an ideal
lunch box recipe. Super easy to make during the morning rush. It is mildly
spicy and has a great flavor. Though it is called cabbage rice, you can also
add other vegetables, like carrot and green peas. Cabbage is packed with
nutrients. It keeps inflammation in check, is rich in vitamins, keeps the heart
healthy and is good for digestion. The cashews and capsicum are the extra add
ons that increase the taste. We usually make this cabbage rice or carrot rice
whenever I make chicken at home, to make sure my kids eat veggies along with
meat. Make this dish today and enjoy a healthy meal!

Ingredients:
Cooked rice- 1 cup
Cabbage- ¼ cup (finely cut)
Capsicum-1(finely cut)
Onion-1(finely cut)
Sambar powder- 1 tblsp
Garam masala- ½ tsp
Turmeric powder- ¼ tsp
Salt- as needed
Oil- 1 tblsp
Cumin seeds- ¼ tsp
Cashews- 4 to 5(broken into small pieces)
Curry leaves- a few
Method:
1.
Heat oil in a kadai. Add cumin seeds and
cashews.

Then add curry leaves and onion. Fry well.
3.
Then add capsicum and cabbage. Mix everything
well.

Add sambar powder, garam masala, turmeric powder
and salt. Stir well. . Sprinkle a little water if needed

Keep in low flame until the veggies are cooked.

Once veggies are cooked, add cooked rice and mix
everything together. Keep in low flame for two minutes co that the masala
blends well with the rice.
7.
Switch off and garnish with coriander leaves.
Notes:
·
Make sure rice is cooked and cooled before
adding. Otherwise it will be sticky. You can do this recipe with left over rice
too.
·
Though we have named as cabbage rice, feel free
to add veggies of your choice. Carrots and fresh green peas to name a few.

Increase the quantity of sambar powder according
to your spice level.

add finely chopped cabbage
stir well
add sambar powder, garam masala,
turmeric powder and salt.
stir a little water if needed.
keep in low flame until veggies are cooked
add cooked rice.
mix everything together
keep in low flame for 2 minutes
so that the masala blends with the rice
switch off and garnish with coriander leaves
