Spring Onion Soup



Green soup is a super healthy soup. Its key ingredients are spring onions and coriander leaves. Whenever I buy spring onions for fried rice, a lot of it remains unused. After I started making this soup, the greens get used up and also my kids get a super healthy evening snack. This recipe was given by my sister-in-law Akila’s mother, Vijaya aunty. Two years ago, I had been to Chennai to attend my nephew’s first birthday celebration. I also spent some time in Vijaya aunty’s place and collected some recipes from her. This is one of them. 

I have to admit that this is not one of the dishes where different spices explode in your mouth. You might find it a little bland, but at the same time, filling and extremely healthy. This is the reason why I make it a point to make this soup once in a while for my daughters. Spring onions are good for the overall health. They are loaded with a lot of essential nutrients. They taste milder than the regular onions. Coriander is great for the digestive system. So take a break from the junk and make your life healthier by including this green soup in your diet.

Prep time: 10 min|Cooking time: 10 min

Ingredients:

Spring onion green part- ½ cup
Spring onion white part- 1 tblsp
Coriander leaves- ½ cup
Soya sauce- ½ tsp
Chilly flakes- 1 tsp
Pepper powder- 1 tsp
Ginger- 1 tsp(finely cut)
Garlic- 1 tsp(finely cut)
Corn flour- 2tblsp
Salt-  as needed

Method:

1.       Wash and clean spring onion and separate the green and white part. Chop them finely and keep ready. Clean and cut the coriander leaves finely.
2.       Heat oil in a kadai. Add finely cut ginger and garlic and sauté for a minute. Then add the spring onion white part and fry well until it turns aromatic.
3.       Now add soya sauce and sugar and mix it well.
4.       Then add spring onion green part, coriander leaves, salt and chilly flakes and sauté it well.
5.       Mix corn flour in water and stir well without any lumps. Add this mixture to the kadai.
6.       Add water to adjust the consistency of the soup and let it boil for 2 to 3 mins.
7.       Finally add pepper powder and switch off the flame.
8.       Serve it hot.

Notes:

·         Make sure to clean the spring onion well, before use, as it is usually muddy. Soak it in water for some time and then clean.
·         You can replace chilly flakes with red chilly sauce.
·         This is kind of slightly bland soup but with plenty of health benefits.

add spring onion white part.
fry till aromatic.
now add soya sauce and sugar.
mix well.
add spring onion green
 part, coriander leaves,
chilly flakes and salt.
saute it well.
mix cornflour in water
and stir without any lumps.
 
add the mixture to the kadai.
add water to adjust the
 consistency of the soup.
let it boil for a few minutes.
finally add pepper powder.
give it a boil and with off the flame.
serve hot.

Hey guys! Biryani gang make some noise!!  I just love it! Today’s post is DONNE BIRYANI!!! Donne biryani is a very popular biriyani type in Karnataka. Paneer Pollichathu! Who said banana leaves are used only as eco-friendly plates? Ever tried steaming in banana leaves?! I first came across meen pollichathu in a restaurant here in banagalore. Gulab Jamun Waffle

One fine day, while scrolling through insta, I came across a giveaway contest by  one of the fellow instagramers  . The challenge went something like this- An Indian traditional dessert with a twist. And I went WOW! It sounded like a very interesting challenge. So Tharu and I got thinking about something unique when she came up with GULAB JAMUN WAFFLES. This dish is actually based on the legendary Gulab Jamun and Vanilla Ice cream combo. So here’s the twist- instead of Gulab Jamun, we have waffles. The waffles are made out of readymade Jamun mix. They are crispy on the outside and soft in the inside. The waffles are coated with sugar syrup and topped with a scoop of vanilla ice cream and a whole lot of chopped nuts. This Seer fish fry is the easiest dish I have EVER made. You just have to mix the spices, toss the fish in it, wait for thirty minutes and fry it. And the tasty fish is ready to eat.  My husband Sankar is a die-hard fan of fish. During my initial cooking days, all my fish dishes were nothing short of a disaster. Raskadam

Back again with another Diwali recipe- Raskadam! I love anything sweet and totally love rasgullas. But my most favourite Bengali sweet is… well, you guessed it. It’s raskadam. Soft and creamy, melt-in-the-mouth khoya covers soft and spongy rasgulla. We add saffron while making the rasgullas, which lends its bright yellow colour to them. The rasgullas are easy to make and the outer covering takes barely any time. Roll them over desiccated coconut and voila! An easy yet classy Bengali sweet is ready to devour!
