Green soup is a super healthy soup. Its key ingredients are spring onions and coriander leaves. Whenever I buy spring onions for fried rice, a lot of it remains unused. After I started making this soup, the greens get used up and also my kids get a super healthy evening snack. This recipe was given by my sister-in-law Akila’s mother, Vijaya aunty. Two years ago, I had been to Chennai to attend my nephew’s first birthday celebration. I also spent some time in Vijaya aunty’s place and collected some recipes from her. This is one of them.
I have to admit that this is not one of the dishes where different spices explode in your mouth. You might find it a little bland, but at the same time, filling and extremely healthy. This is the reason why I make it a point to make this soup once in a while for my daughters. Spring onions are good for the overall health. They are loaded with a lot of essential nutrients. They taste milder than the regular onions. Coriander is great for the digestive system. So take a break from the junk and make your life healthier by including this green soup in your diet.

Ingredients:
Spring onion green part- ½ cup
Spring onion white part- 1 tblsp
Coriander leaves- ½ cup
Soya sauce- ½ tsp
Chilly flakes- 1 tsp
Pepper powder- 1 tsp
Ginger- 1 tsp(finely cut)
Garlic- 1 tsp(finely cut)
Corn flour- 2tblsp
Corn flour- 2tblsp
Salt- as needed
Method:
1.
Wash and clean spring onion and separate the
green and white part. Chop them finely and keep ready. Clean and cut the
coriander leaves finely.

Heat oil in a kadai. Add finely cut ginger and
garlic and sauté for a minute. Then add the spring onion white part and fry
well until it turns aromatic.
3.
Now add soya sauce and sugar and mix it well.
4.
Then add spring onion green part, coriander
leaves, salt and chilly flakes and sauté it well.
5.
Mix corn flour in water and stir well without
any lumps. Add this mixture to the kadai.
6.
Add water to adjust the consistency of the soup
and let it boil for 2 to 3 mins.
7.
Finally add pepper powder and switch off the
flame.
8.
Serve it hot.
Notes:
·
Make sure to clean the spring onion well, before
use, as it is usually muddy. Soak it in water for some time and then clean.
·
You can replace chilly flakes with red chilly
sauce.
·
This is kind of slightly bland soup but with
plenty of health benefits.
