My kids are a big fan of popcorn chicken. Probably because of
the crunchy texture and the taste. But we stopped buying it a couple of years
ago, realizing the ill effects it has on us. Recently, my kids craved for some
of those. As usual, I turned to Google (Aandavar) for help. The first result
that popped up was Swasthi’s KFC style popcorn chicken. I went over the recipe
and realized how easy it is. I tried it at home, and it was an instant hit with
my girls.
The chicken inside was extremely tender and had just the
right spice. The outside was surprisingly crunchy. It all depends on how much
bread crumbs you are adding and how. The first time I tried it out, I had mixed
the bread crumbs in the chicken marinade and that didn’t really yield super
crunchy chicken. The second time, I coated each piece of chicken individually in
the bread crumbs and the end result was simply superb. I am not really a great
fan of deep frying, but it is surely better than the store bought chicken. So try
this and impress your kids!

Ingredients:
Chicken (boneless) - 250 gms (cut into bite size pieces)
Corn flour: 2 tblsp
Egg-1
Salt- as needed
Ginger garlic paste- ¾ th tblsp
Red chili powder- 3/4th tsp
Garam masala- 1tsp
Pepper powder- ¼ tsp
Bread crumbs- 1 cup
Oil - for deep frying
Method:
1.
In a mixing bowl, add the red chili powder,
pepper powder, ginger garlic paste, garam masla and salt. Mix everything together.
Taste it and adjust the salt and spice as required.
2.
Add the chicken pieces to this mixture and mix
well.
3.
Now add the corn flour to the chicken and mix
well.
4.
Then add the egg to this and give it a mix. Make
sure the chicken is moist at this stage.
5.
Take each piece and roll it in the bread crumbs.
6.
Rest it for 10 to 15 minutes so that the bread
crumbs stick well to the pieces.
7.
Heat oil in a kadai on medium flame.
8.
When it is hot enough, check by dropping a small
piece of bread crumb. It has to rise without browing a lot.
9.
Drop the pieces one by one. Do not stir or
disturb for about a minute, or else the bread crumbs may disperse in oil.
10.
Deep fry evenly till golden. Keep stirring after
a minute or two for even frying.
11.
Dry the popcorn chicken on a tissue paper and
serve hot.
Notes:
·
Make sure to cut the chicken pieces into equal
sized pieces so that it gets cooked evenly.
·
Coat the chicken pieces properly in bread
crumbs, so that you get the proper texture after deep frying.

cut chicken into bite size pieces

now add corn flour.
give it a fine mix.
add a egg and mix well.
make sure the chicken is very well moist
take each pieces and roll it over the bread crumbs.
make sure the bread crumbs are coated well.
heat oil in a kadai.
when it is hot enough add the chicken pieces.
do not disturb for a minute or two
later stir gently to cook evenly
remove from oil and dry on tissue paper.
serve hot

Delete1. try to keep the size of the chicken pieces small.
2. make sure that the pieces are completely coated in bread crumbs.
3. the temperature of the oil is also important. Please refer to the steps above for a few tips.
