The month of celebrations begins! So here is another Christmas
cake- Wheat Cake, with jaggery and dry fruits. Wait…. what? Cake without maida
or sugar? Yes! This is a 100% healthy cake. Does it taste good? It sure does! I
must admit that it is not as airy and spongy as maida cakes, but it is totally
guilt free. The jaggery adds a new flavour and you can smell it even before you
bake it. And the dry fruits are so crunchy 😋. Each ingredient adds its own
flavour.
This recipe is from Hebbar’s Kitchen, though I have made a
few minute changes. This can be a celebration cake, a school break or even a
wholesome breakfast for kids. The same cake can be made with maida and sugar,
but it comes along with guilt and portion control 😐. Do you really want that? Try
this cake out and have a guilt free holidays!
Preparation time: 10 minutes| Cooking time: 40 minutes
Course: Dessert| Cuisine: Indian.
Ingredients:
Wheat flour- 2 cups
Baking soda- ¼ th tsp
Baking powder- 1 tsp
Cinnamon powder- ¼ tsp
Salt- a pinch
Jaggery- 1 cup
Oil- ¾ th cup
Curd- ½ cup
Water- ½ cup
Almonds- 2 tblsp (chopped)
Raisins- 2 tblsp
Cashew-5 (chopped)
Walnuts- 5 (chopped)
Method:
1.
In a large mixing bowl take jaggery, olive oil
and curd. Whisk well so that the jaggery melts well.

Take wheat flour, baking soda, baking powder,
cinnamon powder and salt. Sieve everything together and make sure there are no
lumps.
3.
Add the wheat flour mix into the jaggery
mixture. Mix well with cut and fold method until all the dry ingredients
combine well with the mixture. It will be like a thick dough kind.
4.
Add ½ cup water or as required and prepare a
thick batter.
5.
Add all the nuts and give a gentle mix.
6.
Grease a vessel with oil and pour the batter
into it. Garnish with dry fruits.
7.
Bake the cake at 180 degree Celsius for 40
minutes.
8.
Allow the cake to cool completely and later cut
into pieces.
Notes:

You can replace oil with butter.
·
Jaggery can be replaced with brown sugar.
·
Add dry fruits of your choice.
