series post 8- Kodo Millet Pulao
In my
Instagram Question and answer session, many of you had asked for lunch box
dishes with millet. So, this post is for you guys…millet pulao. It is very easy
to make and yet soo tasty. And with all that vegies and millet, you have a
really healthy dish packed to power your day. Not only for lunch, but this dish
can also be eaten for breakfast or dinner. Serve with raitha and enjoy!
Health
benefits of Kodo millet- it has a lot of fiber content. Useful for diabetic
people, helps in weight reduction and is easy to digest. Controls high blood
pressure and keeps check on cholesterol levels.

Ingredients:
Kodo millet-
1 cup
Onion- 1
Carrot-1
Beans- 4
to5
Potato- 1
Grated ginger-
1tsp
Green chilies-
3 to 4
Turmeric powder-
¼ tsp
Garam masala-
1 tsp
Salt- as
needed
Oil- 1
tblsp
Ghee-
1tblsp
Mustard seeds-
¼ tsp
Cinnamon- 1inch
piece
Cloves-2 to
3
Curry leaves-
a few
Coriander
leaves- a handful
Water- 2 cups
Method:
1. Wash kodo millet two or three times.
Then drain water completely and keep aside.
2. Heat oil in a pressure cooker. Add mustard
seeds, cinnamon and cloves. When it splutters, add onion, green chilies, curry
leaves and grated ginger. Fry well until onions are golden brown.
3. Now add all the veggies. Stir well
for 2 to 3 minutes.
4. Now add the kodo millet. Fry for a
minute so that everything combines well.
5. Now add 2 cups of water and salt. When
water starts boiling close the lid and pressure cook for three whistles. Switch
off immediately.
6. Let the pressure release on its own.
Open the lid and gently fluff it with a fork.
7. Serve it with raitha or even some
coconut chutney.
Step by step pictures
wash and clean kodo millet and keep ready
heat oil in a cooker. add mustard seeds,
cinnamon and cloves. then add onion,
cuurry leaves, green chilies and grated ginger.
fry well until raw smell goes away and onion
turns into golden colour
add all veggies. stir well.
add turmeric powder, garam masala
salt and fry well.
add the millet and mix everything together
add two cups of water. close the lid
and cook for three whistles
after pressure releases, gently fluff
