Pearl Millet Vadai

Who doesn’t like vadas? Crispy on the outside and soft on the inside, with aromatic spices, this is totally irresistable. Make it with millets, and you have just made yourself a healthier version of a widely popular dish! The millets give it a new twist in texture. This recipe was shared by my friend Priya Venkatesh. Health benefits of Pearl Millet- it contains a lot of carotene in abundance and hence is good for eyesight. It is useful for people with obesity, diabetes, blood pressure and shortness of breath. It also helps people with heart problems and acidity.

Ingredients:

Pearl  millet- 1 cup
Rawrice- ½ cup
Chana dal-  ¼ cup + 2 tblsp
Toor dal- ¼  cup
Urad dal- 3tblsp
Kashmiri dry red chilies- 6 to 7
Pepper- 1 tbl sp
Cumin seeds- 1 tblsp
Coconut- ¼ cup (grated)
Salt- as needed
Oil- for deep frying

Method:

1.      Wash, clean and soak pearl millet, raw rice, chana dal, toor dal and urad dal in water, for 3 to 4 hours.
2.      Drain the water and add a portion of the soaked millet and dals to mixer grinder. Add red chilies, pepper, cumin seeds, salt and coconut to this.
3.      Grind everything into a thick coarse patse. Don’t add too much water, while grinding. Just sprinkle as and when needed. Repeat the process in batches and complete.
4.      Make flat vadas. Heat oil in a kadai. Fry the vadas over medium heat.
5.      Serve at teatime with hot tea.    

Notes:

·        Make sure you grind millet, rice and dals in batches. Orelse the millet wouldn’t be grinded properly and vadas might turn out hard.
·        The chili quantity I have given, yeilds medium spice. If you prefer more spice, increase the quantity of red chilies.
·        Fry the vadas over medium heat for evenly cooked vadas.

Step by step pictures 


 clean, wash and soak pearl millet,
raw rice, chanan dal, toor dal and 
urad dal in water for 3 to 4 hours.
 drain water and add millet, rice and dals 
to mixer grinder along with red chilies,
pepper, cumin seeds, salt and coconut.
 grind all these into thick coarse paste, 
by sprinkling as little water as possible.

 make flat vadas
heat oil ina a kadai
fry the vadas over medium heat
serve with hot tea.
