Peanut Ladoo!
Who doesn’t
like peanuts? So crunchy, with an amazing taste. I love peanuts, roasted,
boiled or even in variety rice. Simply awesome. What if you add some jaggery to
it? Then you have peanut ladoos! I first saw this recipe in Chitu’s page, Chitra’s Foodbook in Instagram. I first followed her page as a fan of her recipes. Now, I
can happily say that she is a very good friend of mine 😊 I just love her
recipes. The ladoos looked so interesting! So, I gave it a try and totally fell
in love with it… This super easy dish is so healthy and hardly takes any time. Also, it has only two ingredients! Perfect
for as a last-minute snack or even as a school snack. Get your kids to roll the
ladoos and make the dish more fun!

Ingredients:
Peanuts- 1
cup
Grated jaggery-
1 cup
Method:
1. Dry roast the peanuts in a kadai. Roast
in medium flame until the outer skin crackles. Switch off the flame and let the
peanuts be in the hot kadai. The peanuts will become crispy only after it cools
down.
2. Rub the roasted peanuts to remove
the outer skin.
3. Add the peanuts to a mixer grinder
and grind coarsely. Now add the grated jaggery to the mixer grinder, along with
the peanuts and again grind to a smooth powder. Check for sweetness and add
some more jaggery if needed and grind again.
4. Transfer the powder to a plate. Shape
them into ladoos. Store in air tight container and use it within a week.
Notes:
·
Do
not grind the peanuts for long time continuously. Oil might release from the
peanuts and it might become like a paste. Use pulse mode to grind.
·
Ratio
of peanut and jaggery is 1:1
·
You
can add cardamom powder while grinding, for extra flavor.
