Koat Pitha!
Banana is
such a delightful fruit. The taste and sweetness make any dish tasty. I love
any dish with banana… from banana cakes to banana dosa, I love ‘em all! And if
you have a similar taste, then koat pitha is a must try. A Mizoram famous
snack, koat pitha is a fritter like dish made with banana, jaggery and rice
flour. Trust me when I say banana and jaggery go together beautifully. Though traditionally,
it is deep fried, I have used the healthy alternative of cooking in paniyaram
pan. This recipe is adapted from Archana’s kitchen. Enjoy as breakfast or snack
with a cup of hot tea!

Ingredients:
Rice flour-
1 cup
Ripe
bananas- 2
Powdered
jaggery- 1/3 cup
Water- ¼
cup
Salt- a
pinch
Oil- for
frying
Method:
1. Mash the bananas without lumps and
keep it aside.
2. Dissolve powdered jaggery in water
and filter it to remove impurities.
3. Now add the jaggery water, rice
flour and a pinch of salt to the mashed banana. Mix everything well to form a
thick batter.
4. Heat a paniyaram pan and pour a
little oil into the holes. Pour a small ladle of batter into the holes. Cover
with a lid and cook until it turns crispy and golden brown. Now open the lid
and flip it and cook the other side too.
5. Traditional koat pitha is ready to
be served.

The
actual recipe calls for deep frying in oil. I have made this in paniyaram pan.
Step by step pictures
dissolve jaggery in water
filter to remove impurities
mash the bananas
add the jaggery water
to the mashed banana
add rice flour and a pinch of salt
mix everything to form a thick batter
heat a paniyaram pan and add
oil to the holes. pour the batter
and cover and cook it, until crisp.
flip it over and cook the other side too.
serve it hot with tea.
