Soya cutlet!
Everyone
loves cute cutlets. Very tasty and filling, you can use any vegetables you like
and end up with a crunchy and tasty dish. Soya is definitely one of the most
unique ingredients that you can add to a cutlet. Full of proteins, this a truly
nutritious dish. The soya chunks give
unique texture- crunchy on the outside and soft on the inside! It also is a
perfect patty for home made burger. A quick fix for school break. Enjoy with a
side of ketchup and mint chutney!

Ingredients:
Soya
chunks- 1 ½ cup
Potatoes-2
(grated)
Carrot-2
(grated)
Cumin
seeds- ½ tsp
Ginger
garlic paste- 1 tsp
Red chili
powder- 1 tsp
Coriander
powder- 1 tsp
Garam
masala- ½ tsp
Turmeric
powder- ¼ tsp
Salt- as
needed
Coriander
leaves- a handful (chopped finely)
Oil- 4 to 5
tblsp
Bread
crumbs- ½ to ¾ cup (for coating)
Rice flour-
3 tblsp (for slurry)
Water- ¼
cup (for slurry)
Method:
1. Boil soya in hot water for 3 to 4
minutes. Drain it completely and rinse well few times. Squeeze the excess water
out. Blend it into a coarse texture using mixer grinder.
2. Heat 2 tblsp of oil in a kadai. Add
cumin seeds and let it splutter. Add ginger garlic paste and saute it until raw
smell goes away. Now add grated potato and carrot. Saute for a minute.
3. Cover and cook on low heat until the
veggies are cooked completely.
4. Add red chili powder, coriander
powder, garam masala, turmeric powder and salt. Mix well.
5. Add soya and coriander leaves. Mix
well and cover and cook on low heat for 2 to 4 minutes or until completely
cooked.
6. Transfer to a plate and let it cool.
Add 2 to 4 tblsp of bread crumbs. Mix well. Make patties and set aside.
7. Make a slurry by mixing the rice
flour and water.
8. Dip each of the patties in the
slurry and then coat with the bread crumbs. Set aside for 10 minutes.
9. Heat oil in a pan or tawa. When it
is hot enough, place the patties in the oil and fry on medium flame until it
turns golden on both sides
10. Serve it hot along with some tea.
Notes:

You
can also use soya granules instead of soya chunks.

Increase
spice levels according to your preference.

switch off stove and drain the water

transfer to a plate and let it cool

mix well and make patties
make a slurry with rice flour and water
dip the patties in the slurry
coat it with bread crumbs
set it aside for 10 minutes
heat oil on a tawa and fry till patties
are golden brown on both sides.
