Falooda!
It’s summer
and everybody is home. After a nice lunch, everyone craves something sweet… Buying
something from outside is not the best option. So, a nice dessert like falooda is
one of the sweetest treats you can all enjoy! This is one of the recipes I had
written in tamil for Kumudam Snehidhi and here is the English version. This
classical dessert has so many layers of fun in it- it’s got the most important
rose syrup, cool and refreshing sabja seeds, some cooked vermicelli, chilled
sweet milk, topped of with a scoop of vanilla ice cream and some chopped up
almonds and pista! With every scoop and sip, you never know what is going to
delight your taste buds! When you layer them all up in a tall glass, the light
pink shade of the falooda will make you want to eat it right away! So, make this with your family and enjoy a
family dessert!

Ingredients:
Full cream
milk- 500 ml
Sugar- 4 to
5 tblsp
Sabja
seeds- 2 tblsp
Rose syrup-
4 tblsp
Vermicelli-
½ cup
almonds,
pista- a handful (chop finely)
method:
1. Heat the milk in a large vessel. When
it is boiling, add the sugar to it and mix well. Let it boil on low flame for
10 minutes. Switch off flame and let it cool. Then refrigerate it, until
further use.
2. Soak the sabja seeds, in a cup of
water for 30 minutes. After 30 minutes the sabja seeds would double up in size.
Drain the water and keep the sabja seeds aside.
3. Meanwhile, boil 2 cups of water and
add ½ cup of vermicelli to it. Cook it for 4 minutes. Then switch of flame and
drain the water. Wash the cooked vermicelli in cold water and drain the excess water,
completely, if any.
4. Now take two tall glasses. First add
a table spoon of soaked sabja seeds to each glass. Then add a table spoon of
cooked vermicelli and a table spoon of rose syrup to each glass. Next add required quantity of the chilled
milk. Add a scoop of vanilla ice cream on top. Garnish it with finely chopped
almonds and pista. Serve it cold.
Notes:

With
this quantity, you can make four glasses of falooda.
·
Increase
or decrease, rose syrup quantity according to your sweetness preference.
· Wash the vermicelli in cold water, after cookin it, to avoid stickiness.
