This is the fourth day in my first
lunch box series. For short break we have Homemade Popcorn and for long break
we have Vegetable Rolls. Homemade popcorn is the highlight in today’s combo.
Vegetable roll is another healthy yet easy dish, perfect for school.
Short Break- Homemade Popcorn
This is a very easy and healthy
dish and takes only five minutes to make. The best part is that we do not use
any ready to cook mixes. The corn will be freshly popped, with fresh spices of
your choice. You can also squeeze lemon on top or add extra butter. As this can
be made in no time, you can make it in the morning or also keep it ready the
previous day itself. Don’t forget to save some for yourself as a treat after
sending your kids to school 😉

Long Break- Vegetable Roll
This is a simple roll and not very time consuming. In this
dish, Chappati is filled with a tasty aaloo and mutter (potato and peas). You
can also add tomato ketchup, though I don’t prefer it. If not roll, you can
also send chappati or poori and this subji. The recipe is as given below
Preparation time: 10 minutes |Cooking time: 20minutes
Ingredients:
Onion -1
Tomatoes- 2
Potatoes- 2
Green peas – a handful
Chili powder- 1 tsp
Garam masala powder- ½ tsp
Turmeric powder- ¼ tsp
Salt- as needed
Oil- 1 tblsp
Mustard seeds- ¼ tsp
Urad dal- ¼ tsp
Curry leaves- a few
Method:
1.
Heat oil in a kadai. Add mustard seeds and urad
dal.
2.
When it splutters add onion and curry leaves.
Fry well until colour changes
3.
Now add tomatoes and stir well until it mashes.
4.
Then add chili powder, turmeric powder, garam masala
and salt. Mix everything well.
5.
Then add fresh green peas and cut pototes. Add ½
a galss of water to it.
6.
Keep in low flame until the veggies are cooked.
7.
Masala for stuffing is ready.
8.
Roll out the chapatti. Cook it on the stove
9.
Now place the masala stuffing over he chapatti
and roll it.
10.
Pack it for school.

ad cubed potatoes and green peas
add half a glass of water
cook in low flame
switch off after the veggies are well cooked
roll out the chappati
cook it on stove
place the masala on the cooked chappati and roll it.
